I then updated all BIOS settings as you recommended, but my computer continually freezes on the apple logo with the progress bar trying to boot from my “Hackintosh” drive that High Sierra is installed on (booting through the USB still). I followed these instructions exactly to remove the APFS from my boot drive. I have the same motherboard, and CPU, but my graphics card is a Sapphire pulse Radeon RX580. Tried to follow this guide exactly along with your build for the ASUS ROG Maximus Hero X.

The folder will eventually be recreated, however you only need to delete it once after installing macOS.
This folder is created automacially on EFI partition of the flash drive during the install and may cause issues for the hackintosh. Recommendation: Delete the Folder called APPLE in your EFI Folder if it exists. You will now be able to boot macOS without the USB Flash Drive Select Merge when it prompts you with a menu saying that the folder EFI already exists.Paste the EFI over the existing EFI on the disk.

These assume that the installer is in your Applications folder, and MyVolume is the name of the USB flash drive or other volume you're using.
